Unveiling the Modern “Kitchen”: Intelligent Production Lines Redefine the Image of Deep-Fried Instant Noodles

Traditionally, instant noodle production might conjure images of greasy, smoke-filled workshops reliant on manual labour. Yet upon entering Master Kong's XX factory and its fully automated intelligent production line, one encounters a starkly different scene: a highly hygienic, orderly modern industrial landscape. Here, the journey from flour to the familiar packet of fried instant noodles in our hands takes less than half an hour, with over 500 packets rolling off the production line every minute.

Dough Mixing and Rolling: The Art of Shaping the Noodle's Structure

The production line commences at a colossal dough mixer. Precisely measured quantities of premium wheat flour, water, salt, and alkaline solution are automatically fed into the machine, where they undergo thorough kneading under vacuum conditions. This step is crucial, as it determines the fundamental structure of the dough sheet. ‘Vacuum kneading prevents air pockets, ensuring the noodles retain a firm, springy texture when rehydrated,’ explains Engineer Wang from the production line.

The kneaded dough then undergoes a series of precise compound rolling processes. Much like fabric being ironed, it is repeatedly pressed and stretched between massive rollers until it forms a uniformly thick, paper-smooth sheet.

Steaming, Cutting, Shaping: Sealing in Freshness and Original Flavour

The thin sheet traverses a steam tunnel stretching dozens of metres, undergoing precise steaming at 100°C for approximately 120 seconds. This process fully gelatinises the starch within the flour and alters the proteins, thereby locking in the dough's original wheat aroma.

Subsequently, the sheet is rapidly cut into fine noodle strands and fed into wave-shaped mould trays. This classic wavy design serves not only aesthetic purposes but also enhances the noodles' fluffiness, maximising surface area contact with hot water during preparation for faster rehydration.

Precision Dehydration: The “Core Technology” of Frying

Dehydration constitutes the pivotal stage of the entire production line. The formed noodle cakes are conveyed into a vast “palm oil bath” – the continuous fryer. The production line manager emphasises that modern factories exclusively utilise palm oil meeting national food-grade standards, supported by fully automated monitoring and purification systems.

‘The oil bath maintains a stable temperature of 150-160 degrees Celsius. During the 90-120 second immersion, moisture content plummets from approximately 35% to below 3%,’ Engineer Wang explained, gesturing towards the monitoring screen. "This not only achieves rapid dehydration and extends shelf life but also imparts the dough sheets with their distinctive crisp texture and enticing aroma. Through the principle of “oil-water displacement”, we remove moisture while allowing some fats to form a uniform pore structure. This is precisely the secret behind the dough's rapid rehydration capability."

Crucially, the production line's oil undergoes continuous 24-hour filtration and is regularly replenished with fresh oil, ensuring consistent quality and safety – a far cry from the repeated frying practices of street stalls.

Cooling and Packaging: Robots Handle It All

The fried dough sheets proceed to a cooling tunnel, where they are brought to room temperature before entering the fully automated packaging stage. Robotic arms precisely grasp each sheet, feeding them into the packaging machine alongside automatically dispensed powder packets, sauce sachets, and vegetable portions. From weighing and inspection to sealing and coding, the entire process is machine-operated, minimising human contact and ensuring food hygiene.

Future Outlook: Balancing Efficiency and Health

In response to growing market demand for healthier options, the factory manager stated that the company is actively developing non-frying production lines (such as hot-air drying) while upgrading existing frying technology. This includes researching methods to further reduce dough absorption rates and employing healthier oil formulations.

‘This production line represents not merely efficiency and scale, but embodies the Chinese food industry's progress in safety, standardisation, and technological application,’ commented an industry observer. ‘Future competition will be decided on these very automated assembly lines.’
